Preparation for the upcoming Harvest starts in the autumn.

In a sense, the checking and fixing of lines never ends but it's during October and November that the most work is done to ensure that the lines that will transport the sap are in good shape to weather a Vermont winter.

Sap tanks like the one you see in the video below, are put in place, ready to collect Eden Notch Maple sap – a natural water filled with minerals, nutrients and over 54 different antioxidants.
