"When is the right time to start tapping?"
-Well, to answer this,
we have to look at some influential factors that include:
Tree age, size, and health, duration and rate at which the tree froze, atmospheric pressure, soil moisture, and crown size. There can also be a tremendous difference in temperature within a forest, depending on elevation. Also to note, Dr. Tim Perkins, Director of the University of Vermont Proctor Maple Research Center, looked at long term tapping records throughout the Northeast and found that sugaring season has started about a week earlier and ended 10 days earlier over the past 40-50 years.
Therefore due to the Eden Notch Estate's elevation and position in the northern hemisphere, the size of our forest, age, and Dr. Perkins' study - we find January to be the best...
