During the past several seasons, we have been refining the maple sap harvesting process and focusing on how best to produce the finest maple syrup possible. We are incredibly fortunate to be able to source our syrup from a unique and special location deep in the Northeast Kingdom of Vermont. The combination of nutrient filled lime-rich soils and pristine waters provide remarkable natural ingredients from which we create our JEM Maple syrups.
In order to deliver the very best product possible, we limit the collection times within the harvesting windows which enables us to source the “First” and “Late” Harvest syrups from a single estate. We also wanted to provide a special syrup offering which includes a base from our Eden Notch Estate specially blended with several other hand-picked maple stands. The result is the exceptional “JEM Maple Seasonal Blend” syrup, with a crisp, bright artisan crafted flavor.
Unlike other products, where the syrups are a result of combining 10’s or even 100’s of different maple stands, we at JEM believe the absolute best syrups start with the finest pure natural ingredients. By utilizing our “single estate” approach and leveraging the ingredients that nature has bestowed on the Eden Notch estate, we believe the result will speak for itself in a truly special and unique maple syrup.
One of the results of a single estate harvest is the fact that availability of our product is limited. Maple syrup production in general is reliant on ideal climate and soil conditions. JEM further constrains that production by only sourcing from a single estate. All our JEM syrups will have limited availability, in particular our “First” and “Late” harvest, while our “Seasonal” blend will have slightly higher yield and therefore additional availability while it lasts.
We have spent a great deal of time and effort to ensure the experience with our syrups is a great one and look forward to your feedback and ideas on how we can improve even further.
