It's mid-October in Vermont and farm shares are brimming with Brussel sprouts!
Our friends over at Let's Pretend Catering have achieved Brussel sprout perfection with this recipe that includes bacon, walnuts, and of course, JEM Maple Syrup.
No longer a simple side dish, let your brussel sprouts take center stage tonight!
Yield: 4 servings
INGREDIENTS
4 cups of brussels sprouts, ends trimmed
2 tablespoons vegetable oil
pinch of salt
pinch of black pepper
4 strips of thick cut bacon
2 tablespoons butter
1 cup JEM Reserve Select Maple Syrup
1 cup toasted walnut halves
INSTRUCTIONS
Preheat oven to 375°F
Place brussels sprouts on a sheet pan in a single layer and toss with oil, salt, and pepper
Lay strips of bacon over the tops of the brussels sprouts and roast for 15-20 minutes or until sprouts are tender and bacon is crisp
Remove from oven and set aside. Once bacon is cool enough to handle, roughly chop it.
In a small sauce pan, bring the butter and maple syrup to a boil. Reduce heat to a simmer. Simmer until liquid is reduced by half.
Pour maple mixture over the roasted sprouts, add in the walnut halves, and stir to evenly distribute. Roast all together for another 6-8 minutes. Adjust seasonings and serve.
