Delicata Maple Moons

Welcome Squash Season with these golden crescents.

A family favorite, Delicata Maple Moons are a perfect late afternoon snack,

a stand out topping for beans and rice, chili, and salads,

or add them to your Thanksgiving table accompanied with a colorful array of roast parsnips, Brussels sprouts, and rainbow carrots.

 

Delicata squash are high fiber,

low carb, and packed with immune boosting vitamins A + C

that will give your winter skin an added glow.


Ingredients:

1 medium Delicata squash (about a pound), halved lengthwise, seeded, and cut into 1/4-inch thick slices

1/2 tblsp JEM Maple Syrup

1+ 1/2 tblsp extra virgin olive oil

2 sprigs of fresh thyme

hearty pinch of salt

red pepper flakes to taste


Instructions:

Preheat the oven to 425 degrees Fahrenheit. Prepare and line a baking sheet with parchment paper.

In a mixing bowl, mix the squash with the olive oil, maple syrup, salt and red pepper flakes.

Spread contents of bowl out onto parchment paper lined baking sheet and put in the oven for 25-30 minutes. Stir half way through roasting.

Once the Delicata squash has reached a beautiful gold with slightly brown and crispy skin, pull out of the oven and sprinkle fresh thyme evenly over the squash as it cools.

Serve and enjoy.
